Lychee Kheer: The Sweet Kheer Variant For You

It is prepared by the lychees, green cardamom, sugar, milk and rose essence. It is a luscious dessert item which is perfect to be savoured post a heavy meal. You could serve this North Indian food either cold or hot as per your choice. Ingredients for Lychee Kheer:
- rose essence-6 drops
- powdered green cardamom-3
- lychee-350 gm
- milk-1 1/2 litre
- sugar-6 tbsp
For Garnishing:
- pomegranate seeds as per requirement
How to prepare Lychee Kheer:
Step 1) To make this dessert recipe, put a saucepan on moderate flame & heat milk into it. Drop green cardamom powder into it & stir it properly. Once it becomes aromatic, switch off the flame & put it beside for a few minutes. In the meantime, peel & de-seed the lychees.
Step 2) Put the vessel with milk on the moderate flame again & allow it to boil till it lowers to half its amount. Drop sugar & saffron into it & give it a stir. Allow the sugar to dissolve & spray the rose essence into it. Lower the flame & allow the milk to boil over a low flame. Then, stir in the peeled lychees. Mix them finely & make sure they are evenly coated with the milk.
Step 3) When the milk has attained the expected consistency, turn off the flame. Place the kheer in a vessel & allow it to cool. Put it in the fridge for chilling. When chilled, bring it out & have with pomegranate seeds & some peeled lychees to relish!
